Poached Eggs Chicken Toast
A protein-packed toast with juicy chicken, creamy avocado, and perfectly poached eggs — a breakfast that fuels your day!

Ingredients
- 2 slices of whole-grain or sourdough bread
- 2 large eggs
- 1 small cooked chicken breast, sliced
- 1/2 avocado, mashed
- 1 tsp vinegar (for poaching eggs)
- 1 tbsp olive oil or butter
- Salt and pepper to taste
- Optional: fresh herbs or chili flakes for garnish
Instructions
- Toast the bread slices until golden and crispy.
- Spread mashed avocado evenly over the toasted bread.
- Arrange sliced chicken on top of each toast.
- In a saucepan, bring water to a gentle simmer and add vinegar.
- Crack an egg into a cup and gently slide it into the simmering water.
- Poach each egg for about 3–4 minutes, then remove with a slotted spoon.
- Place one poached egg on top of each toast and season with salt, pepper, and optional herbs.
- Serve warm and enjoy a balanced, energizing meal!
