Scrambled Egg Toast

Ingredients
- 2 slices of bread (white, rye, or whole-grain)
- 3 large eggs
- 1 tbsp butter or olive oil
- 1 tbsp milk or cream (optional, for creamier eggs)
- Salt and pepper to taste
- Optional toppings: herbs, cheese, or sliced avocado
Instructions
- Toast the bread slices until golden and crisp.
- In a bowl, whisk together the eggs, salt, pepper, and milk (if using).
- Heat butter in a non-stick pan over medium heat.
- Pour in the egg mixture and let it cook undisturbed for a few seconds.
- Gently stir with a spatula until the eggs are soft and slightly creamy.
- Remove from heat just before they are fully set — they’ll finish cooking from residual heat.
- Place the scrambled eggs on the toast, top with herbs, cheese, or avocado, and serve immediately.
