  1. Toast the bread slices until golden and crisp.
  2. In a bowl, whisk together the eggs, salt, pepper, and milk (if using).
  3. Heat butter in a non-stick pan over medium heat.
  4. Pour in the egg mixture and let it cook undisturbed for a few seconds.
  5. Gently stir with a spatula until the eggs are soft and slightly creamy.
  6. Remove from heat just before they are fully set — they’ll finish cooking from residual heat.
  7. Place the scrambled eggs on the toast, top with herbs, cheese, or avocado, and serve immediately.
